HOBO JOE'S DINER RECIPES

MONDAY SPECIAL

PIZZA


Hobo Joe's only serves one size of pizza. It is a 12-14 inch pizza made from 1 lb. of freshly made dough and topped with the house pizza sauce and a liberal choice of toppings. It is served with a comlimentary fountain soft drink and a house dessert.


1 LB PIZZA DOUGH


2 1/4 cups all purpose flour, plus more if needed
1 pkg (1/4 oz) active dry yeast
1 tsp salt
1 cup vey warm water (120°F)
1 tsp sugar
1 Tbs olive oil

MIX IN FOOD PROCESSOR: In a food processor fitted with steel cutting blade, place 2 1/4 cups flour, yeast and salt. Process 3-5 seconds, or until ingredients are well mixed.

In a measuring cup with spout, combine water, sugar and 2 tsp of the oil. With the processor running, slowly pour the water mixture through the feeding tube.

After it is completely mixed, if the dough is too soft, add more flour 1 Tbs at a time until a smooth ball forms.

TO RISE AND SHAPE: Place dough ball in a bowl that has been coated with non-stick cooking spray and turn the dough to coat all sides. Cover with plastic wrap and allow to rise at room temperature 35 to 40 minutes, or until doubled in size. Punch the dough down, cover and let rest for 10 minutes.

Using your finger tips or the back of your hand, spread te dough to cover the bottom of a 12 - 14 inch pizza pan that has been coated with non-stick cookng spray and sprinkled with corn meal. Form a rim around the outside edges of the dough to hold sauce.

With a fork, prick the dough 15 to 20 times. Brush with the remaining 1 tsp oil. Top as desired and bake according to directions.

TIPS: Spray hands lightly with non-stick cooking spray prior to forming pizza dough to prevent sticking.

A preheated pizza stone can be used instead of pizza pan. Never oil a stone!

It is not necessary to force the dough to a perfect round shape. Irregularities give your finished pizza a more authentic rustic look.

HOUSE PIZZA SAUCE


1 cup tomato sauce
1 Tbs tomato paste
1/2 tsp dried oregano
1/4 tsp sugar
1/4 tsp dried basil
1/8 tsp dried garlic powder
1/8 tsp onion powder

In a jar or container with a lid, combine tomato sauce, tomato paste, oregano, sugar, basil, garlic powder and onion powder. SHAKE WELL. Spread evenly over pizza dough and add toppings and cheese as desired

BAKING INSTRUCTIONS: Preheat oven to 450°F.

Bake completed pizza for 12 to 14 minutes or until cheese is melted and crust is crisp and brown.

CHEESE FOCCACIA



The wildly popular focaccia is so easy to make using pizza dough. (recipe above)

1 recipe of pizza dough above
1 onion, finely chopped
2 cloves garlic, minced
2 Tbs olive oil
1 tsp dried basil
1 tsp dried oregano
1/2 tsp. dried rosemary, crushed
1 cup shredded mozzarella cheese

Spread dough onto 12" to 14" pizza pan sprayed with non-stick spray. Dimple with fingertips to make dents. Set aside.

Cook onion and garlic in olive oil in small saucepan. Remove from heat and stir in herbs.

Spread evenly over the dough and top with the cheese.

Bake at 400 degrees for 10-15 minutes until focaccia is deep golden brown.



ANYTHING ELSE?


FRESH TOMATO CALZONES



1 recipe of pizza dough above
3/4 pound ground beef, sausage, or pepperoni
Four or five tomatoes very coarsely chopped
One hot pepper, finely chopped
Ten or twelve fresh basil leaves, chopped
Grated Romano cheese - about 2 or three ounces to taste

Preheat the oven to 450 degrees.

Mix the tomatoes, cheese, pepper and basil, let stand while doing the rest.

Cook and drain the meat and set aside.

After punching the dough down the first time, if it has not risen a bit put it in an oiled bowl, cover it with a moist towel and let it rise until it is double in size.

Handling the dough very gently so as not to punch it back down, turn it out, and cut it in half.

Gently form two circles about 10 inches in diameter. Put the dough circle over a plate (some will hang over the side).

Put half of the meat and half of the tomato mixture on the dough in the center of the plate. Spread it out a bit.

Fold one half of the dough over the top and press the sides together. Pick up the plate and turn the dough out onto the oiled pan.

Do the same with the other one.

Bake about 20 to 25 minutes, or until it is a brown color.
